Kathleen's Mango Chutney

  • 40 grams (1/2 small) onion, pealed & cut into quarters
  • 1 clove garlic, or 1/2 teaspoons from jar
  • 1 cm pices of fresh ginger, or 1/2 teaspoon from jar
  • 1 teaspoon oil
  • .5 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon Nutmeg
  • 1 teaspoon salt
  • 25 grams treacle
  • 150 grams vinegar
  • 75 grams Cranberries
  • 350 grams raw sugar
  • 600 grams mango flesh, peeled & cut from seed

Recipe's preparation

    Preparation
  1. Place onion, garlic & ginger into bowl & chop 5 sec / sp 8. Scrape down bowl.
    Add oil & saute 100 % / 2 mts / sp 1.
    Add cinnamon, allspice, nutmeg, salt, treacle & vinegar.
    Cook 100 % /10 mts / sp 1.
    Add cranberries, sugar & mango.
    Cook 100 % / 35-40 mts / reverse / sp 2 /MC on.
    Once it begins to boil, replace MC with basket.
    Pour into sterilized jars & seal. Turn jar upside down (to help seal) Store when cool.

Tip

To sterilize jars - Fill them with 2 cm of water & place in microwave for 2 mts. This boils the water & the steam does the rest. Tip the boiling water onto the lids to sterilize them. Make sure to use hot holders at the water is extremely hot.
