Kewpie Mayonnaise

  • 5 g malt vinegar
  • 5 g apple cider vinegar
  • 10 g rice wine vinegar
  • 2 level teaspoon caster sugar
  • 1 level teaspoon salt
  • 1 teaspoon Wasabi
  • 1 --- egg
  • 200 g Grape seed oil, (Can use sunflower or rice bran)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Kewpie Mayo
  1. Weight oil in a jug, set aside

    Crack egg into MC set aside.

    place vinegars, sugar and salt into bowl. Put on for 2mins, 100 deg, speed 1.with mc off

    then turn up 1min, speed 5, add egg, and wasabi put on mc

    turn up to speed 6 for 5 mins slowly drizzle oil until all mixed

    Add lemon juice thru mc hole with 10 seconds to go.

    pour into a jar and store in the fridge for up to 3 months if it lasts that long.

    Didn't compare to the kewpie I buy in store. Very runny, rather flavourless. Sorry to say, I was sorely disappointed
