If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Tip

This will last for up to a week in the fridge.

Mum always makes this for every occasion, but especially for Christmas. She will gift it out, and no one to date has found one better.

Buller Malmsey is an Aussie - and much cheaper - alternative to traditional Madeira. It is available for purchase from Dan Murphy's.

Thank you so much! I am so glad that you love the recipe as much as we do! Some good tips too, and originally we also fried the bacon but it became more about pumping out the production haha. That particular sherry never made it further than mums' glass tmrc_emoticons.;) thanks again, and happy holidays!

  • This is seriously the best

This is seriously the best pate I have ever tasted!  I make this all the time for friends.  A variation I do is to use Pedro Ximenez sherry if I can't get the madeira or malmsey.  I also find that frying the bacon a bit boosts the flavour.

Thanks for making me so popular at parties!!
