Garlic&Lemon explosion hummus!

  • 2 cloves garlic
  • 400 grams Canned Chickpeas, I use 250g reconstituted chickpeas #see tips at bottom
  • 50-60 grams freshly squeezed lemon juice, approx 2-3 lemons depends upon taste
  • 1.5 tbsp tahini, I make my own
  • 40 grams extra virgin olive oil, I make and use garlic infused oil to intensify taste
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1 pinch ground black pepper
  • 1 pinch ground paprika, spinkle to garnish

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Place garlic into mixing bowl and chop 3 sec/speed 7. Scrape down bowl and repeat chopping 3 sec/speed 7.
  2. Add chickpeas, lemon juice, tahini, extra virgin olive oil, ground cumin, salt and pepper and mix 20sec/speed5. Scrape and repeat until desired consistancy, i repeat twice more then drizzle with EVO oil and garnish with paprika

Tip

I buy dried chicken peas - take 250gm and soak overnight then boil next day and let cool. Take out 250gm portions which equal 1 x 400gm can of chickpeas x it is cost effective and can be frozen in portions
