Ingredients

Tomato free Passata

  • 2 tbsp extra virgin olive oil
  • 2 brown onions halved, or 4 shallots
  • 6 cloves garlic, peeled
  • 400 grams Beetroot, roughly chopped
  • 2 celery sticks, roughly chopped
  • 3 carrots, roughly chopped
  • 1 tsp salt
  • 1 tbsp Oregano fresh, or 1 teaspoon dry
  • 2 cups homemade stock, 500ml
  • 1/4 cup pitted black olives, Kalamalata
  • 2 tbsp lemon juice

Recipe's preparation

    Nomato converted from Sarah Wilson "I Quit Sugar"
  1. Place onion garlic beetroot celery and carrot into bowl

    Place lid & MC on

    chop 10-15 sec - Speed 5

    Scrape down bowl (repeat if necessary till "grated" consistency)

    Add Olive Oil 

    Place lid and MC on

    Saute 5 mins - Speed 1 - 120 degrees

    Add sea salt oregano and stock (or water)

    Place lid on & steaming basket (no MC)

    20 mins - Speed 2 - 120 degCounter-clockwise operation"Counter-clockwise operation"

    10 mins - Speed 1 - Varoma - Mc on

    Add olives and lemon juice

    Place lid and MC on

    Blend 1 min.Speed 5-10 increasing speed gradually

serve with meatballs, roasted veg or use in your bolognaise

    Thanks very much for converting this recipe! Tried it last night as a bolognese

    If you can get your head around a non-tradiitonal pasta sauce (I admit I struggled to let go of the 'but it's beetroot' thoughts in my head) it's pretty tasty!

    I added fresh parsley on top to serve.
