Rhubarb Chutney
- 300 g brown onion
- 1000 g rhubarb
- 660 g brown sugar
- 240 g sultanas
- 625 g white vinegar
- 1 tbsp Mustard seeds
- 1 tsp mixed spice
- 1 tsp ground ginger

- Add 330g brown onion
- Add 1000g Rhubarb
- Chop 5 Sec/ Speed 4
- Add 660g brown sugar
Add 240g sultanas
Add 625g white vinegar
Add 1Tbsp Mustard seeds
Add 1tsp mixed spice
Add 1tsp ground ginger - Stir 5 sec / Reverse / Speed 2
- Cook 60 min / 100°C / Reverse / Speed 1 with lid cap off
- Then cook a further 15 min / Varoma / Reverse / Speed 1
- Mixture should be glossy and thick, with sultanas plump and rhubarb broken down but still textured. If too runny, extend cooking 10 min / 100°C / Reverse / Speed 1 with lid cap off
- Pour hot chutney into sterilised jars, seal immediately
Store in a cool, dark place; refrigerate after opening.
