Ingredients

Roasted capsicum & jalapeno hummus (low salt)

  • 2 cloves garlic
  • 1 red capsicum
  • 1 jalapeño chilli
  • 1 can chickpeas (drained and rinsed), OR 250g cooked chickpeas
  • 15 g olive oil
  • 1 tbsp tahini, (optional)
  • 30 g lemon juice
  • salt to taste

Recipe's preparation

    Roasting capsicum and jalapeno
  1. Roast capsicum and jalapeno on baking tray in oven at 200degC until skin chars (approx. 15 mins for jalapeno and 20 mins for capsicum).
  2. Place in sealable plastic bag/container for a few minutes while hot. Then remove from bag and peel skin (taking care and/or using gloves, as they will be hot!), remove stalks, de-seed and slice.

  3. Hummus
  4. Place garlic in TM bowl and chop 3 sec / sp 7.
    Scrape down sides.

  5. Add capsicum and jalapeno and chop 3 sec / sp 7.
    Scrape down sides.

  6. Add all remaining ingredients and blend 10 sec / sp 6.
    Scrape down sides.

  7. Blend again 5 sec / sp 5.

  8. Serve with crackers or vegetable sticks, or chill until ready to serve.

Tip

Serve with a garnish of fresh chopped chillies if desired.
