Recipe's preparation

    Jam
  1. Soak your fruit in water for a few minutes in a sink of cold water and drain.  Then seperate the red calyx (the fleshy cover surrounding the seedpod) from the seedpod. Put the red calyx into a bowl and set aside, and place the seedpods in thermomix bowl.  Cover the seedpods with water approx one cup.  Cook seedpods for 10-20 min, 100 deg, speed 2.  They should go soft and translucent in appearance.

  2. Strain the seedpods through simmering basket keeping this liquid and returning it to the thermomix bowl.  Discard seedpods. This process extracts pectin from the seedpods to help the jam to set. Add your red calyx to the liquid in your themo bowl.  Peal, cut and core the apple and add to liquid along with the lemon juice.  cook for 20min, 100 deg, speed 2. The red calyx should be very soft after this step, you may need to cook for a further 5 min to get the desired effect

  3. Measure the fruit pulp and add cup for cup of sugar to fruit, or for larger amounts , 1Ltr fruit - 1 Kilo sugar.  Cook for 20min, 100 deg, speed 2 until sugar has all desolved.  Then cook for a further 10min on veroma temp speed 1-2, measuring cup removed. This will cause splattering and frothing of the jam.  Place ur basket over the hole in lid upsidedown. 

  4. Test for setting by placing a saucer in the freezer to chill, then put a teaspoon full of jam on the saucer, wait for ti to cool slightly then push the top of it with your finger.  If it crinkles it is cooked.

    Just made this beautiful jam, thanks for sharing the recipe.  I left my jam on the test saucer until it was cold before testing my setting point (I've overcooked previous jams).  tmrc_emoticons.)
