Satay Sauce

Ingredients

6 portion(s)

Sauce

  • 2 Red shallots, small size
  • 1 clove garlic
  • 1 red chilli (seeds optional)
  • 1 level teaspoon curry powder
  • 20 g olive oil
  • 150 g crunchy peanut butter
  • 20 g fish sauce
  • 15 g fresh lemon juice
  • 20 g brown sugar
  • 180 g coconut milk

Recipe's preparation

    Sauce
  1. Peel and half shallots.  Place into Thermomix bowl.

    Peel Garlic.  Place into Thermomix bowl.

    Chop for 5 seconds, speed 7.

    Scrape down and repeat if necessary.

     

  2. Place Olive Oil and Curry Powder into Thermomix bowl.

    Sautee Onion, Garlic and Curry Powder

    for 3 minutes, 100 degrees, Speed 1.

     

  3. Scrape down Thermomix bowl with spatula.

     

  4. Add remaining ingredients.

    Cook for 5 minutes, 100 degrees, Speed 2.

Tip

This will produce a thick, crunchy, medium-spiced peanut satay sauce. Goes really nicely with chicken, vegetables and rice. It should not be too oily - don't adjust olive oil - use a good quality peanut butter otherwise you will have too much oil - I took a cup of oil off one batch using cheap peanut butter! Enjoy...

    Definitely too oily, I will try to adjust next time I cook it, but it was delicious. I added about a tablespoon of soy sauce and a teaspoon of ginger as well.

    Super delicious, easily as good as you get in a restaurant. I've made it many times and use peanut butter made in the Thermomix, and vegan fish sauce.

    Yummy sauce, read comments and adjusted recipe to add only half the amount of oil and 15g fish sauce. Also used a brown onion because I didn't have any shallots. Served with coconut rice and marinated chicken (honey, soy, garlic, ginger and fish sauce) and steamed carrots and broccoli. Partner said it's his new favourite!

    Thank you for sharing! This sauce is a keeper! I also at recommendation of others reduced the oil and fish sauce to 15 grams.perfect. My new go to satay sauce!

    my fiance' LOVED it...

    i used peanut oil insted of olive oil and used half a brown onion insted of the red shallots

    My daughter made this sauce and I used it to marinade chicken on sticks for at least 2 hours then my son barbecued them on my Weber Q ...wow they tasted so good ...very moist ...heaps better than the shop brought stuff which I can't eat because if all the additives they put in them. I have also frozen a batch for later on as well.  Cooking 2
