- 2 teaspoon whole cloves
- 1 onion, peeled &amp; halved
- 2 clove garlic, peeled
- 700 g tomato passata
- 220 g red wine vinegar
- 250 g brown sugar
- 1 tsp salt
- 1/2 tsp cayenne pepper
Place whole cloves in mixing bowl and mill 10 seconds speed 9
Add in onion & garlic and chop 3 seconds speed 7. Scrape down sides of bowl.
Add in all remaining ingredients and cook 30 minutes Varoma speed 2 with steaming basket in place of mixing cup in lid
Replace mixing cup and puree mixture for 1 minute until smooth, gradually increasing speed from low to 9 maximum. (be careful to only increase gradually as ingredients extremely hot)
Pour into sterile jars to store. Refrigerate.
Remove the mixing cup and replace with simmering basket during cook time to prevent splatter.
Remember to replace mixing cup prior to pureeing in final step and be careful to increase speed very slowly to prevent splatter.
