Sweet and Sour Sauce (meat and fish)

  • 2 cloves garlic
  • 2 cm ginger, stem
  • 150 g tomato passata
  • 80 g rice wine vinegar
  • 80 g white sugar
  • 250 g pineapple pieces, fresh or canned drained
  • 4 spring onions, trimmed and cut into pieces
  • 200 g red capsicum, deseeded and cut into pieces

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Place garlic and ginger into mixing bowl and chop 5 sec/speed 6. Scrape down sides of mixing bowl with spatula.
  2. Add tomato passata, vinegar, sugar, pineapple, spring onions/shallots and capsicum and cook 8 min/120°C/Counter-clockwise operation/speed 2.
  3. Add reserved cornflour paste and cook 2 min/100°C/Counter-clockwise operation/speed 1. Transfer sauce into a thermal serving bowl or other large bowl and cover to keep warm, until ready to mix with meat or fish. Or place in sterilised jars and refridgerate, or place in food bags when cooled for freezing.
