Sweet and Sour Sauce (meat and fish)
- 2 cloves garlic
- 2 cm ginger, stem
- 150 g tomato passata
- 80 g rice wine vinegar
- 80 g white sugar
- 250 g pineapple pieces, fresh or canned drained
- 4 spring onions, trimmed and cut into pieces
- 200 g red capsicum, deseeded and cut into pieces

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Place garlic and ginger into mixing bowl and chop 5 sec/speed 6. Scrape down sides of mixing bowl with spatula.
- Add tomato passata, vinegar, sugar, pineapple, spring onions/shallots and capsicum and cook 8 min/120°C/"Counter-clockwise operation" /speed 2.
- Add reserved cornflour paste and cook 2 min/100°C/"Counter-clockwise operation" /speed 1. Transfer sauce into a thermal serving bowl or other large bowl and cover to keep warm, until ready to mix with meat or fish. Or place in sterilised jars and refridgerate, or place in food bags when cooled for freezing.
