Sweet Corn Relish

  • 500 g tinned sweet corn
  • 1 large onion
  • 1 red capsicum
  • 1 green capsicum
  • 1 clove garlic
  • 400 g white wine vinegar
  • 100 g water
  • 300 g sugar
  • 1 teaspoon salt
  • 1 teaspoon mustard powder
  • 1 teaspoon yellow mustard seeds
  • 1 teaspoon turmeric
  • 1 teaspoon curry powder
  • black pepper
  • cornflour mixed with water

Recipe's preparation

  1.  

    Put capsicums, onion, garlic in TM – speed 5, for 3-5 seconds.  Transfer to a bowl.

     

    Put vinegar, water and sugar into TM – speed 1, for 6 mins on 100 degrees

     

    Rinse the sweet corn under running water and allow to drain.

     

    Add corn, capsicum mix, yellow mustard seeds, turmeric, curry powder, black pepper to vinegar

     

    Cook on REVERSE, speed 2 – 3 for 15mins, 70 degrees

     

    When cooked – add salt and mustard powder

     

    Thicken with cornflour to your liking… make sure quite thick as you don’t want it runny on your sandwiches! 

     

    Cook 70 degrees for a further 2 – 3 mins on reverse speed 2 – 3 to cook out cornflour taste.

     

    Pour the mixture into sterilized jars and seal tightly.
    Place in a cool, dark place for 4 weeks. It will keep for at least 4 months (unopened).

If you wish to have a spicy corn relish add chilli!!!!

    I also gave up adding corn flour and put it in a pot on my stove top to thicken. Beautiful flavour and made a large batch. 🌽

    Thanks for this recipe. Great flavour - made it tonight but instead of letting Ernie thicken it up I found it quicker to put the mixture into the pot and put it on the stove top to finish it off - much quicker and easier. I read the recipe wrong amd added 1 teaspoon of pepper instead of just pepper so next time I will know not to do that as it is a bit spicy for me but will be great mixed in sour cream for dips which is why I made it in the first place. Also used fresh corn instead of tinned corn and had no capsicum in it as ai didn't have any.

    Yummy yummy flavour. Agree this is runny so after 6 dessert spoons of corn flour i just cooked it longer to thicken it.

  • I gave up adding cornflour

    I gave up adding cornflour and cooked for around about 20 mins on Varoma (with the basket on the lid) to thicken it a bit more. I also added more sugar to be equal with the vinegar and it cut any sharp after taste.

    Bottled 5 jars ranging from 150ml to 250. Yummy.

    I just made this and it made seven jars!  (my neighbours will be happy!) - However mine did need more than half a cup of corn flour to thicken!  Also  I used plain white vinegar (in error!) however it seems fine and obviously cheeper to make with the plain vinegar.!
