Tofu alfredo sauce

Tofu alfredo sauce

  • 300 g silken tofu
  • 1 tbsp miso paste
  • 1/2 cup Cashews, soaked
  • 1 tbsp Onion powder
  • 2 cloves garlic
  • 1 cup vegetable stock
  • 1 cup plant milk
  • 2 tbsp soy sauce
  • Salt & pepper to taste

Recipe's preparation

  1. 1. Add all ingredients to the bowl and blend for 1 minute speed 7.

    2. Simmer on the stove for 15 min then add to cooked pasta & veggie.

You can swap out the miso paste for nutritional yeast.

If want a thinner consistencey you can add another 1/2 cup of stock.

You can either soak the cashews over night or for 10 minutes in hot water.

I like to cook my pasta and veggies in the same pot (just add the veggies in 5 minutes before the pasta is done.)
