- 120 g silken tofu
- 2 tsp lemon juice
- 2 tsp djion mustard
- salt, to taste
- 200 g vegetable oil
Insert butterfly. Place tofu, lemon juice, mustard and salt into mixing bowl and mix 30 sec/speed 4 or until mixture is smooth.
With butterfly still rotating on speed 4 and MC in place, gradually pour oil onto mixing bowl lid. Add oil slowly to start with and then faster as the mayonnaise starts to emulsify. This should take approximately 2 min 30 sec.
