Tomato and Date Chutney

  • 900 grams Roma tomatoes
  • 100 grams Dates pitted
  • 70 grams Brown onions, diced
  • 90 grams white wine vinegar
  • 3 --- green apples, cored, peeled & chopped
  • 1 pinch Nutmeg
  • 1 tablespoon paprika, sweet
  • 1 tablespoon Mustard seeds
  • 1 tsp pepper corns
  • 1 tsp salt
  • 20 grams Organic Brown Sugar
  • 4 tablespoons Currnets or Sultanas
  • 3 cloves garlic, crushed
  • 10 leaves lemon balm leaves

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. 1. Add first 5 ingredients chop on Closed lid speed 5 / 7 seconds.

    2. Cook Closed lid 30 min / 110 deg / speed 2 (use simmer basket by removing measuring cup).

    3. Add next 5 ingredients (herbs and spices).

    4. Cook Closed lid 15 min / 110 deg / speed 2.

    5. Add Organic Brown Sugar, salt, Lemon balm leaf and dried fruit.

    6. Cook Closed lid 2 min / 110 deg / speed 3.

    7. Transfer hot chutney into heated jars - will thicken when cool.

    8. At times sugar can stick to bottom of Thermomix after chutney is removed a soft kitchen brush can remove this easily.

Tip

NB* Cut end off (just below handle) of a two (2) litre milk bottle and turn upside down to use as a funnel to fill jars with hot sauce.

    Made half quantity (one jar) and it tastes good. Quite thick even before spooned into jar however we like the consistency. Didn't add garlic as it wasn't included in the method so didn't realise it hadn't been included until it was too late.

    Pretty yummy.  The consistencyc is good although i was expecting it datier haha  Also i used smoked paprika instead of sweet as that's all i had and i think it's overpowering.  Definately doable but if you wanted it not to take over dont do that tmrc_emoticons.)

    Made this today.Very tasty. Recipe didn't say when to add garlic so I added with the first 5 ingredients.
