Tomato Sauce

  • 1000 grams tomatoes, Halved
  • 1 red capsicum, Quatered
  • 1 brown onion, Quatered
  • 100 grams Brown Vinegar
  • 10 black peppercorns
  • 20 yellow mustard seeds
  • 1 dried bay leaf
  • 1 pinch cayenne pepper
  • 1 teaspoon paprika
  • 75 grams brown sugar
  • 1 teaspoon salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place vinegar, garlic, tomatoes, capsicum and onion into mixing bowl. Blend Counter-clockwise operationspeed 7 for 10 seconds. Scrape down sides of Bowl.
  2. Cook Varoma, Counter-clockwise operationspeed 2 for 8 minutes or until mixture starts to bubble out from under MC.
  3. Add peppercorns, mustard seeds, bay leaf, cayenne pepper, paprika and salt, cook at 100 degrees Counter-clockwise operationspeed 1 for 30 minutes. If sauce starts to bubble up over lid, remove MC until bubbling over stops then replace MC.
  4. Remove bay leaf and add brown sugar, cook at 100 degrees Counter-clockwise operationspeed 1 for 20 minutes with steamer basket in place of MC.
  5. Replace MC and blend for 1 minute starting at Counter-clockwise operationspeed 5 and gradualling increasing to Counter-clockwise operationspeed 10.
  6. Pour into hot sterilised bottles

Tip

If mixture is too thick in consistency, add a small amount of boiling water after step 5 and blend a further 10 seconds Counter-clockwise operationspeed 8. This shouldn't be necessary unless using very fleshy tomatoes.
