If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipe's preparation
- Put the cucumber into the bowl and chop for 3 seconds, speed 5. Then transfer into the TM basket and drain for about 10 minutes. Squeeze excess liquid out of cucumber. Discard water from cucumber and clean and dry mixing bowl.
- Put dill or mint into mixing bowl and chop for 3 seconds, speed 7. Scrap down sides of bowl.
- Add all reserved cucmber, yogurt, red wine vinegar and salt to the bowl and mix 15 seconds, "Counter-clockwise operation" , speed 3.
- Serve straight away or refridgerate until ready to use.

Tip
Tzatziki is versatile and can be used with many different foods. Serve with:- Chopped, raw vegetables such as carrots, cherry tomatoes, snow peas, cucumber, red capsicum or celery.- Salmon and rice patties (see my recipes)- Freshly cooked meats, such as beef or lamb- Pita or flat breads- Kababs or souvlakis.
