Steamed Salmon & Zuchinni with Herb, Cabbage & Mushroom Salad

Herb, Cabbage & Mushroom Salad

  • 2 limes cut into quarters
  • 50 grams macadamia oil
  • 100 grams tamari
  • 4 small red chillis
  • 4 cloves garlic
  • 2 fresh ginger knobs
  • 100 grams mushrooms, sliced, thinly
  • 300 grams White cabbage
  • 3 heaped tablespoons Vietnamese mint leaves
  • 2 sprigs fresh dill
  • 5 sprigs fresh mint
  • Salt and cracked pepper, to taste
  • 1/2 Brown onion peeled
  • 400 grams salmon fillet (skin off)
  • 2 Zuchinnis, peeled with peeler into thin strips
  • 1000 grams water, for steaming salmon

Recipe's preparation

    Marinade & Salad
  1. Salmon Marinade

    Add the quarters of 1 lime to bowl with 2 cloves of garlic, 1 knob of ginger, 2 chillis and chop 10 secs / speed 10. Scrape down sides of the bowl and chop 3 seconds / speed 7. Coat Salmon in Marinade and set aside for 20 minutes.

    Salad

    Add remaining lime , garlic, ginger & chilli  to bowl and chop 10 secs / speed 10. Scrape down sides of the bowl and chop 3 seconds / speed 7.

    Pour over the mushrooms to marinate.

    Add the remaing ingredients to the TM bowl & chop for 2 secs / speed 5.

    Add marinated mushrooms to bowl and chop for a further 1 sec / speed 5.

    Set salad aside.

    Steaming Salad and Zuchinnis

    Place 1000grams of water into TM bowl.

    Place TM lid on bowl and place varoma dish onto the TM lid.

    Place Varoma tray onto varoma dish, top with salmon and pour remaining marinade over salmon.

    Steam Salmon 10 minutes / Varoma / Speed 3.

    Add zuchinni to varoma dish, and return salmon to the varoma to cook for a futher 5 minutes / Varoma / Speed 3.

    Serve with Salad and serve immediately.

Tip

It's also great to mix in some bean shoots too!!

You could add rice to this dish, simply reduce water to 900 grams, add 400 grams of basmati rice to the simmerin basket and cook for an additional 5 minutes. As rice will take longer, remove the salmon and zuchinni from the varoma for the final 5 minutes.
