Warm potato and lentil salad

Ingredients

Salad

  • 650 g potatoes, cubed
  • 3-4 slices Bacon, diced
  • 900 g water
  • 1 tablespoon TM veg stock paste
  • 190 g French Green Lentils
  • 100 g white wine or verjuice
  • 3-4 leaves kale sliced thinly

Dressing

  • 1 stalk spring onion
  • 1 clove garlic
  • small bunch parsley
  • 5 Cornichons
  • 1 heaped teaspoon baby capers
  • 30 g red wine vinegar
  • 1 tablespoon Dijon mustard
  • 60 g extra virgin olive oil
  • salt/pepper

Recipe's preparation

    Salad
  1. Place potatoes in basket and bacon into varoma dish. Add water, stock paste, lentils and wine/verjuice to TM bowl. Putting varoma in place, cook 20min, 100, counter-clockwise operation, spd1.

  2. Remove potatoes (you may like to rinse them slightly) and bacon and set aside in thermoserver.

  3. Add kale to varoma dish and set back in place. Cook a further 5-10min, 100, counter-clockwise operation, spd1. Check lentils and cook again if necessary.

  4. Add kale to thermoserver, drain lentils and add to thermoserver. Rinse and dry TM bowl.

  5. Dressing
  6. Add spring onion, garlic and parsley to bowl. Chop 3sec, spd7. Scrape sides of bowl. (Check it's not still on reverse!)

  7. Add the remainder of your ingedients and combine 5sec, spd 4.

  8. Stir dressing through salad.

Tip

Delicious as a side dish or even a main meal.

Easily made in to a vegan dish by removing bacon.
