Basil & Chilli Chicken Soup with Parmesan crumble

Ingredients

Pesto mix

  • 90 g Basil leaves
  • 2 cloves garlic
  • 1 chilli
  • 70 g pine nuts

Soup

  • 400 g water
  • 300 g cream
  • 400 g chicken (cubed)
  • 1-2 teaspoon rock salt

Recipe's preparation

  1. counter-clockwise operation


    Place pesto mix ingredients into TM bowl and pulverise speed 7 for 3seconds.  Scrape down sides and repeat.


    Add water, salt, cream, chicken and cook 100oC, 12minutes, counter-clockwise operationGentle stir setting


     


    To garnish, grate Parmesan block with potato peeler and crumble.
