Broccoli & Cauliflower Soup

Ingredients

4 portion(s)

  • 30 g Parmesan cheese, cubed
  • Half onion, quartered
  • 1 clove garlic
  • 700 g water
  • 400 g broccoli florets
  • 400 g cauliflower florets
  • 1 tablespoon TM stock concentrate
  • 20 g oil
  • 2 tablespoons plain flour
  • 30 g Butter
  • salt to taste

Recipe's preparation

  1. Place Parmesan Cheese into TM Bowl & grate for 15 seconds on speed 8.  Set aside.

  2. Place onion and garlic into TM Bowl and chop for 4 seconds on speed 6.

  3. Add water, cauliflower, brocolli and stock concentrate into bowl and cook for 15 minutes at 100 degrees on speed 1.

  4. Add flour, oil, butter & cheese and cook for a further 5 minutes at 100 degrees on speed 1.

  5. Blend for 1 minute slowly climbing speed from speed 1 to speed 8.

  6. Season to taste and serve!!

    A delicious & nutritious soup - I also add a small amount of additional green vegies (baby bok & shallots), both 50/50 veg & chicken stock powder + plenty of cracked pepper - and occasionally some diced bacon bits. It smells & tastes great whatever way you make it! Love comments re substitution (potato/yeast/flour etc).

    Made this tonight for the cold weather coming!!! I used nutritoinal yeast instead of cheese ( dairy free) and didnt add any flour. Added my own spices. Tastes delicious.

    I made it with frozen broccoli and cauliflower florets so reduced the amount of added water just a little. It was really lovely - definitely tasted the veggies. I can see me making this a lot! It was so quick and easy.

    Loved how easy this soup was to make. I used 1 onion, sautéed slightly and halved the butter/oil/ flour as suggested by other comments. Lovely soup - recommend this one

    I needed to use up some broccoli and this soup has been perfect! Smells really nice and I'm waiting until it cools to have another taste! Also didn't use flour. I used a whole onion and one garlic clove and sautéed them after chopping for four minutes.

    Easy and yum!  I also left out the flour and oil, and also halved everything in the recipe as it was just for me (with one serve left for tomorrow).  Cooked exactly the same except the second 5 mins I only did for one minute.  Came out perfect.  Thank you!!

    Lovely soup. Only had 300g broccoli in garden, so added 100g potato. Used pecorino instead of Parmesan and reduced oil and butter amounts a bit. Broccoli-averse husband liked it, toddlers refused to try. Thank you!

    This soup is a favourite of ours. Tonight I didn't have enough of the Cauli and Broc so I added 200gm of Kale, a very green and slightly stronger taste than normal but delicious all the same. I leave out the oil and flour and just use the 30gm of butter.

    A really delicious soup and so easy to make. I used all the peeled stalks and a little less water. Like others I omitted the flour and all fats but I did fry in a pan chopped bacon until crisp. I added the cheese and bacon after blitzing the soup and just blitzed them in for a few seconds.  Even with the bacon I think this is a very healthy addition to any menu.     I just made this and it was yum! I added the oil after step 1 and sautéed the onion/garlic first. I also blitzed the veg first so it all fit I to bowl. I left out the butter & flour and just sprinkled Parmesan on to serve...delicious!!

     adding a piece of bacon next time just to add some zing. I also chopped the broccoli and cauliflower into small pieces and it just squeezed into the bowl. Will be making this one lots through winter tmrc_emoticons.)
