Carins Curried Broccoli and Potato soup

  • 3 cloves garlic
  • 1 onion medium
  • 1 teaspoon coconut oil
  • 1 tablespoon Curry powder mild
  • 1/2 teaspoon black pepper
  • 600 grams water
  • 1 tablespoon Red miso paste or vegie stock paste
  • 600 grams Sweet Potato chopped
  • 2 --- Heads of broccoli chopped
  • Pumpkin seeds to garnish

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. place garlic and onion in TM bowl and chop 3 secs speed 5. scrape down sides, add coconut oil and saute 3 mins , 120 deg speed 1.

     

    add curry powder and saute further 1 min 120 deg speed 1.

     

    add pepper, sweet potato, and broccolli and chop 6 secs speed 5.

     

    add water,  and miso  or vegie stock paste, and cook 20-25 mins100deg speed 2 with steam basket on top instead of MC to stop splatters. 

     

    check cooked through and purree,  1 minute gradually increasingspeed to 5 and then to 9 to consistency of choice.

     

    garnish with pumpkin seeds.

Tip

Substitute sweet potato with Jerusalem artichokes.

care when processing hot food.. liquid not more than 2.2 litres.

spice it up with chillie.

I had so much brocolli I nmade concentrate soup by only adding 100mls water, and cooking 25 mins varoma speed 1.... .puree and kept in fridge, adding water to dilute for lunch... or you could freeze too!
