Carrot & Ginger Soup

  • 1/2 onion, large
  • 2 stalks Celery
  • 2 cloves garlic
  • 1.5 cm Root ginger
  • 600 g carrots, chopped in chunks
  • 500 g water
  • 1 tablespoon vegetable stock, homemade
  • 30 g Olive Oil.
  • salt and pepper to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Carrot & Ginger Soup
  1. Put onion chopped into quarters, garlic, ginger and celery (chopped into pieces) into the bowl and chop, 3 seconds/Sp 5

    Add 30g olive oil and turn 3min/120/Sp 1

    Add carrots, water and vegetable stock cook for 25min/100/sp 1

    Check carrots are soft, blitz, 1min/sp 4-8 increasing gradually.

    Can serve with a swirl of yoghurt and parsley to garnish.
