Carrot & Ginger Soup
- 1 leek, roughly chopped
- 2 teaspoons olive oil
- 200 grams sweet potato, peeled, roughly chopped
- 3 carrots, roughly chopped
- 500 grams water
- 1 tablespoon TM vegetable stock
- 1 tablespoons ginger paste
- 2 cloves garlic
- 1 tablespoons Basil Pesto
- 1 tablespoon lemon juice

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Place leek & garlic into mixing bowl and chop 3 seconds/speed 7. Scrape down sides of the bowl.
- Add ginger paste & oil and saute' 3 minutes/varoma/speed 1.
- Add sweet potato and carrots and chop 15 seconds/speed 7. Scrape down sides of bowl.
- Add water and stock and cook 20 minutes/100°C/speed 1.
- Add pesto & lemon juice and blend 1 minute/speed9, gradually increasing speed from speed 1 to speed 9.

This was a delicious soup. I used to make a carrot and ginger soup that was Linda McCartney's recipe. I liked this more.
i didn't have sweet potato, so I ised white potato.
