Cauliflower, Zucchini & Leek Soup

  • 1 onion, peeled and cut in half
  • 1 clove garlic, peeled
  • 20 g olive oil
  • 2 tbsp TM stock concentrate
  • 500 g water
  • 1/4 cauliflower florets
  • 2 Zucchinis ( Courgettes), Peeled if you dont want a green soup
  • 1/2 leek, White part only
  • 6

Recipe's preparation

    Soup
  1. Place onion and garlic into TM bowl and chop 1 sec / speed 7, scrap down the sides.
  2. Add oil, saute 3mins/Varoma/Speed 1
  3. Add water and stock. Place all veggies into theTM basket, insert basket and cook for 20mins/Varoma/Speed 2.
  4. Empty veggies from basket int the TM bowl with the water and stock, puree for 1 min ( gradually increasing speed) from speed 1 to speed 9.
  5. Transfer soup into Thermoserver to keep warm until ready to be eaten. (Thermoserver will keep the soup warm for atleast 1.5 hours).

    Delicious!

    I couldn't fit all the veggies in the steamer basket so cooked in the bowl and cooked for an extra 5 minutes. Topped with Parmesan cheese 😊

    lovely thx.....subbed 1 zucchini with 2 potatoes, skin on, for a different flavour + used whole leek the second time round...didn't over mix it so it was more rustic in texture...prob less stock next time as a bit too salty for me.

    Couldn't even get through half a dozen spoonfuls the salt was way too much.
    If you make this add half a teaspoon of the stock and work your way up from there.

    Lovely flavours: l also tweeked this recipe by adding 2 cloves of garlic, extra zucchini, cauliflower & a large leek ( white only ) cooked in stock water. Cooked a bit longer & blitzed extra 30 seconds. Served like others Parmesan cheese with a sprinkle of sweet paprika. Thanks for sharing absolutely delicious 😋

    A delicious healthy creamy soup😋 I used the rest of my cauliflower @400gms and used whole leek (white part only) I put Veges straight in the bowl, added an extra 100gms of water and cooked for an extra 10mins ( I might not have cut cauliflower small enough)
    will save and make again👍🏻

    Nice taste for sure. I didn’t have any TM a stock paste so just added OXO chicken stock cube and used 4 pods of garlic ( who uses only 1?! Lol)Not sure what the purpose of the basket is, I just put all the Veges in the water cooked for 20 min and then puréed it after. Tastes good.
    I also fried some chopped up bacon and added it to give it a crunch. The whole family loved it. Will make again.

    Made this today but used half a cauliflower and only one zuchinni and it was beautiful. I used two tablespoons of stock paste but I make my concentrate with about half the amount of salt in it so it was just right.
