Chestnut and Mushroom Soup

Ingredients

  • 1 kg chestnuts, boiled and peeled
  • 1 kg mushrooms, sliced
  • 15 mls Olive Oil
  • 2 onions, cut in pieces
  • 6 celery sticks, cut in pieces
  • 4 tablespoons chicken stock paste
  • 2 litres water, (or the max that will fit, which ever is the lesser)
  • 1 Thyme, to taste
  • parsley, to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Prepare the chestnuts and set aside

  2. 2. Place onions and oil in thermomix bowl and saute 3mins/var/spd 2

  3. 3. Add mushrooms and celery and saute another 2 mins/varoma/speed 1

  4. 4. Put the remainder of the ingredients (chestnuts, stock and herbs)  in the bowl and cook 30 mins/varoma/speed 1

  5. 5. Puree the soup - 1 min/speed 8 or until soup is smooth and creamy
