Chicken and Mushroom soup

  • 1 garlic clove
  • 1 brown onion
  • 50 grams celery stalks
  • 100 grams carrot
  • 20 grams Butter
  • 400 grams boneless skinless chicken thigh
  • 150 grams fresh mushrooms
  • 25 grams chicken stock paste
  • 700 grams water
  • 1 level tsp salt

Recipe's preparation

  1. Add garlic, quartered onion and chopped up celery and carrot to the mixing bowl. Mix for 5 seconds speed 7. Add the oil and cook for 5 minutes, 100 degrees, measuring cup off, simmering basket on top. Add diced chicken and other remaining ingredients and cook for 25 minutes, 100 degrees, reverse, speed 1. Once cooked you can serve as a broth. If you want a creamy soup, as pictured, set your Thermomix to 1 minute, no heat, speed 5 and increase the time over the minute to speed. You could add a drizzle of cream, it's not essential.

    For dairy free, use a nut butter or olive oil.
