CHICKEN & CORN WITH PASTA SOUP

Ingredients

CREAMED CORN

  • 300 g fresh cooked corn (about 3 cobs) or frozen corn kernels
  • 30 g ghee or butter
  • 30 g Coconut Flour
  • 250 g almond milk, unsweetened
  • 1 tablespoon Coconut sugar
  • salt and pepper to taste

SOUP

  • 3 cm piece fresh ginger, peeled
  • 2 cloves garlic, peeled
  • 1 red chilli with seeds (optional)
  • 30 g Coconut or olive oil
  • 100 g onion
  • 850 g water
  • 2 tablespoon EDC chicken stock paste
  • 300 g Chicken thigh fillets
  • 300 g creamed corn (recipe above)
  • 100 g risoni pasta
  • 1 tablespoon tamari or soy sauce
  • 150 g baby Bok Choy, shredded finely

Recipe's preparation

    CREAMED CORN
  1. Cook or steam corn and then cut the kernels off the cobs

  2. Place ghee, coconut flour, almond milk, coconut sugar, salt and pepper into TM bowl and cook for 6 minutes/90 degrees/speed 4. (may appear to have separated but will be fine)

  3. Add 200g of the corn and blend for 15 seconds/speed 5.

  4. Add balance of the corn, Counter-clockwise operation/4 seconds/speed 3.

  5. NOTE:  this recipe makes 600g of creamed corn, so I use half for the soup and freeze the balance for another meal.

  6. CHICKEN & CORN WITH PASTA SOUP
  7. Add garlic, ginger and chilli into TM bowl, chop 3 seconds/speed 7. Scrape down sides of bowl. Add onion into TM bowl and chop 3 seconds/speed 5.

  8. Add coconut oil and cook 4 minutes/Varoma temperature/speed 1. MC off

  9. Add water, stock paste; bring to boil for 5 minutes/Varoma temeperature/speed 1

  10. Add chicken to TM bowl,Counter-clockwise operation/10minutes/100 degrees/Gentle stir setting or until chicken is cooked.  Remove chicken from TM bowl and allow resting for 10 minutes while continuing to cook soup.  Cut chicken finely.

  11. Add creamed corn, and pasta to TM bowl on Counter-clockwise operation/10 minutes/100 degrees/speed 1.

  12. Return chicken to bowl and add Bok Choy stalks on Counter-clockwise operation/2minutes/100 degrees/Gentle stir setting

  13. Place leafy green of Bok Choy into Thermoserver, pour soup over, add Tamari sauce, stir.  Season to taste and allow to rest with lid on for 3 minutes.

    Didn't have some of the ingredients for the creamed corn, so I used corn kernels and coconut milk, tasted great!
