Chicken Parmi Soup

  • 60 grams mozzarella, Block
  • 100 grams parmasan cheese, Block
  • 1 to taste parsley, Small Handful
  • 2 cloves garlic
  • 1 brown onion, Halved
  • 30 grams olive oil
  • 500 grams chicken breast, Diced
  • 70 grams tomato paste
  • 2 tablespoons chicken stock paste, From Basic Cookbook
  • 750 grams water
  • 400 grams Tinned tomatoes, 1 Tin
  • 250 grams pasta, Penne

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Chicken Parmigiana Soup
  1. Add Mozzarella and Parmesan to bowl. Grate on speed 9 for 5 seconds. Set aside in seperate bowl.

     

  2. Add Parsley to bowl. Chop speed 7 for 5 seconds. Set aside in seperate  bowl.

     

  3. Add Garlic and Onion to bowl. Chop speed 7 for 3 seconds.

     

  4. Add oil to Garlic and Onion and cook for 5 minutes, 100 degrees on speed 1.

     

  5. Add Chicken and cook for 3 minutes, 100 degrees on speed 1.

     

  6. Add Tomato Paste, Stock Paste, Water and Tinned Tomatoes. Cook for 12 minutes, 100 degrees on REVERSE speed 1.

     

  7. Add Pasta. Cook for 12 - 15 minutes (or until pasta is cooked), 100 degrees on REVERSE speed 1. Note: Place the simmering basket on top instead of measuring cup.

     

  8. Once cooked, place into Thermoserver. Stir through grated Mozzarella and Parmesan cheeses.

     

  9. Optional: Garnish with Parsley to serve.

Tip

For the ultimate Parmigiana experience, consider adding bacon or ham to the recipe and even some croutons.

    Little one loved it!

    I removed the chicken after first sautéing it and then added it for only six minutes at the end once the pasta was already cooking. I would imagine the chicken might be too well done otherwise.

    Think I might try some sundried tomatoes or olives in it next time and perhaps some more spices.

    My son who "i don't usually like soup" LOVED this one! Infact we all did.  I didn't have any stock or tomato paste & used thigh fillet instead. Delish - thanks for this great & simple recipe.

    Delicious, filling and perfect soup for those cold winter days. I served it to a non-soup eater - he's now converted! And my son ate it with both a fork and a spoon!Such a super tasty and easy to make soup, and we loved it with the additional croutons. I will definitely be making it again.
