Cream of potato and celery soup

  • 1 brown onion, quartered
  • 2 cloves garlic
  • 30 grams coconut oil
  • 2 --- Zucchinis, chopped into sections
  • 700 grams water
  • 2 tablespoons vegetable stock concentrate
  • 300 grams celery stalks and some leaves, roughly chopped
  • 60 grams coconut cream
  • 1 dash cracked black pepper, to taste
  • 2 sprigs parsley, to taste

Recipe's preparation

    Cream of potato (zucchini) and celery soup
  1. 1. Chop onion and garlic for 4 seconds on speed 7

    2. Add 30 mls coconut oil and cook for 3 minutes at 100

    3. Add chopped zucchinis and water and cook for 8 minutes at 100 on speed 2

    4. Add celery and vegetable stock concentrate and cook for a further 15 minutes at 100 on speed 1

    5. Add handfull of parsley and blend for 30 seconds on speed 5

    6. Add 60 mls coconut cream and pepper to taste and blend for 2 minutes on speed 3

    7. For a smoother consistency blend for a further 30 seconds on speed 7
