Creamy Cauliflower and Bacon Soup

  • 1 brown onion, quartered
  • 2 cloves garlic
  • 250 grams Rindless Bacon
  • 30 grams olive oil
  • 2 tablespoons TM Veg Stock Concentrate
  • 600 grams water
  • head cauliflower, chopped to fill TM steamer basket
  • 120 grams cream
  • salt and pepper to taste

Recipe's preparation

    method
  1. Place onion and garlic into mixing bowl and chop 3sec/speed 7, scrape down sides of bowl.

    Place bacon in mixing bowl chop 2 -3sec/speed 7

    Add oil, saute 5mins/Varoma/speed 1

    Add TM veg stock concentrate, water and salt and pepper to bowl

    Add chopped cauliflower into the steamer basket

    Cook 20 -25mins/100C/speed 1

    Using the spatula to lift the basket tip the cooked cauliflower into the mixing bowl and blend 1min/gradually increasing to speed 9

    Add the cream and blend for a further 20secs/speed 3-4

     

    serve and garnish
