Creamy Chicken and Vegetable Soup (dairy free, nut free)

Ingredients

6 portion(s)

  • 500 grams chicken breast, diced 3cm
  • 1 Brown onion, quartered
  • 1 clove garlic
  • 2 carrots, diced
  • 2 celery sticks, diced
  • 4 small potatoes, cubed
  • 0.5 zucchini, diced
  • 150 grams arborio rice
  • 1 litre chicken stock
  • any other veg you would like to add
  • 10 grams olive oil
  • salt and pepper to taste
  • 1 heaped tablespoon parsley

Recipe's preparation

  1. 1) Chop onion and garlic in TMB 5 sec / speed 7.

    2) Add olive oil and cook for 3 mins/100 degrees/speed 1.

    3) Add arborio rice and 50ml water and cook 2 mins/100 degrees/speed 2 Counter-clockwise operation.

    4) Add chicken and cook 5 mins/100 degrees/speed 2 Counter-clockwise operation.

    5) Add vegetables, stock and parsley and cook 20 mins/100 degrees/speed 1Counter-clockwise operation.

    6) Season to taste

    Really yummy soup. I put in too many veggies & could only add half of the stock to bring the jug up to capacity. I just stirred it every now & then threw the lid with the thermomix spoon to keep it moving. Poured the finished soup into a container & stirred threw the other half of the stock. I usually make the creamy chicken & brown rice soup which is my favourite but this is a bit easier even with dicing the veg. It's my new favourite. Kept me full all afternoon. Thank you for your recipe ❤️

    Delicious recipe!! Next time I make it I will probably halve the amount of rice though so it doesn't make it so gluggy. Very tasty though and will be making again. Thankyou!

    This was so yummy and so easy to make tmrc_emoticons.) I did have to extend cooking time by five minutes as potato and carrot werent cooked completely, but I did have them cut a little bigger. Will definitely be making again!

    This is a delicious soup! I've made it multiple times now and each time it's worked out perfectly. I love that you can make it with whatever veggies you have at the time. I'm currently making it with just carrots and potatoes as that's all I have at the moment. The cooking time may vary depending on the vegetables you use. I also substitute the rice for quinoa and it's perfect.

    Made this one again today, but I had no celery so added in some ginger instead, OMG amazing!!! Will always add ginger this one now!

     

     

     

    Great receipe, soooo tasty. 

    I also got to the max limit but when the cooking time was up I halfed the mix, cooked for an extra 5mins per half and added in an extra 300ml of chicken broth. Enough soup for the whole week for both my husband & myself tmrc_emoticons.;)

    Actually I think I will try thigh next time. Thighs I believe are better for this type of recipe and the taste can be richer.

    It is definitely a recipe that will be a keeper in our household.

    It was delicious. I did find that I may have put too many veggies in as I thought that the carrots were small so added more. Plus the celery I bought was huge and I think one stalk would have been ok. I only just got under the maximum amount for the TM.. and when I got to the end of the cooking time the carrot and celery were too crunchy so increased the cooking time and it was perfect

    Plus I did take it off reverse  the second time around so that it pureed a little more. I ended up with 9 servings so I defintely put more veggies in obviously... but since there's no dairy, I put the servings into zip lock bags that went into the freezer. Great lunch idea.

    Delicious Receipe!  I used chicken thigh instead of breast and I didn't have chicken stock so I substituted with 500ml beef and 500ml vege stock.  I used carrot, zucchini, potato as it's all I had.  Will definitely make this again.  Thank you!
