Curried Sweet Potato and Carrot Soup

  • 1 Onion halved
  • 2 cloves garlic
  • 20 grams olive oil
  • 1/2 teaspoons ground cumin
  • 1/2 teaspoon curry powder
  • 300 g chopped carrots
  • 450 g chopped sweet potato
  • 2 teaspoons Vegetable stock paste
  • 800 g water
  • 1 tablespoons natural yoghurt to serve
  • 1 teaspoons chopped chives to serve

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. Place chopped onion, and garlic in bowl and add 20g olive oil. Chop on speed 5 for 3 secs, or until desired size is met.
    Scrape down sides of bowl.
    Cook for 3mins on 120 speed 1.
    Add the cumin and curry powder to the bowl cook for 1 min at 120 speed 1.
    Add carrot, potato and chop 10 sec speed 7.
    Add the stock paste and water and cook for 20 mins /100 / speed 1.
    Blend for 1 min starting at speed 5 and gradually increasing to speed 9.
    Season with salt and pepper.
    Serve with dollop of natural yoghurt and chives,
