Dairy free broccoli soup
- 1 onion
- 3 garlic cloves
- 10 grams olive oil
- 1 heaped teaspoons cumin seed, ground
- 1 potato
- 50 grams Cashews
- 1 zucchini
- 600 grams broccoli/stems
- 700 grams water
- 2 tbsp Veg Stock Paste
- 2 tbsp freshly squeezed lemon juice
- to taste Salt and pepper
- 2 level tbsp freshly squeezed lemon juice

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- - Cut onion in 1/2, add to bowl with garlic,cumin and oil, 3 seconds, speed 6
- Scape down, saute at veroma temp 3mins, spd 1 with MC off
- Add potato and cashews, chop 5 secs, spd 5
- Add roughly chopped broccoli and zucchini, chop 3 secs speed 5
- Add water and veg stock paste
- Cook for 25 mins, temp 100, spd. 1
- Slowly increase spead to 7 with MC on
- Add lemon juice and salt and pepper to taste
