- 1 onion, peeled and quartered
- 220 g carrot, roughly chopped
- 220 g Celery, roughly chopped ( some leaves could be included)
- 200 g green lentils, washed and soaked
- 150 g tomato paste
- 900 g water
- 1/2 tsp sea salt
- 1/4 tsp milled black pepper
- 30 g lemon juice
- 30 g extra virgin olive oil

Recipe's preparation
Wash lentils and soak over night in plenty of water.
Chop onion 3 sec / speed 7.
Add carrot and celery. Chop 3 sec / speed 4.
Scrape down sides of bowl and repeat 3 sec / speed 4
Add lentils, tomato paste, salt, pepper and water - make sure not to exceed the maximum capacity mark on the bowl.
Cook 25 mins / 100 C /"Counter-clockwise operation" /speed 1. MC off and TM Basket on lid.
Add lemon juice and EVOO. Stir lightly to mix into soup.

Tip
There are variations to this Greek soup - Faki. This recipe was my Yaya's and my mother's. It has always been a family favourite.
Serve with crusty bread.
Freezeable.
Also delicious served cold.

Quick, healthy and delicious. I used red lentils which I just rinsed and the soup turned out beautifully. The olive oil and lemon juice were a great addition
I added the lentils in step
I added the lentils in step 5; assuming they need cooking. I managed to forget the EVOO at the end, but found it extremely tasty regardless. It has a full but not overpowering flavour, and enough body to serve as a mains or a starter. This is going into my favourites list.
