Ingredients
Healthy Chicken and Vegetable Soup
- 500g chicken breast cut into 3cm cubes
- 1 onion cut into quo
- 1 carrot roughly chopped
- 2 celery stalks roughly chopped
- 1 red pepper roughly chopped
- 5cm fresh ginger thinly sliced
- 5cm Fresh tumeric thinly sliced
- 4 Springs of fresh parsley leaves
- 40g Butter
- 40g plain flour
- 40g chicken stock paste
- 800g water
- 1/2 lemon rind only
- 1/4 tsp black cracked pepper
- 1/2 lemon juice
- 3 garlic cloves
Garnish/Serving
- chopped parsley
- shallots thinly dliced
- extra lemon juice
- Steamed Rice
- OR egg noodles
Asian style soup
- Drizzled with Fish sauce and Sesame oil

I'm cooking this todayRecipe's preparation
- 1. Add onion, carrots, celery, red capsicum, ginger, tumeric, parsley & garlic to the mixing bowl and chop 5 sec / speed 5. Scrape around the mixing bowl.
NOTE.. for chunckier vegg result chop 3 sec / speed 5. - 2. Add butter and Saute 5 min / 100c / speed 2. Scrape around the mixing bowl.
- 3. Add chicken & plain flour & stir in with spatula to combine and Cook 1 min / 100c / Reverse speed 1.
- 4. Add water, stock paste, lemon rind, lemon juice & pepper and Cook 15 min / 100c / Reverse speed 1.
- 5. Taste test and adjust the seasoning if needed.
- 6. Serve hot with steamed rice or egg noodles, topped with chopped parsley, shallots & a squise of lemon juice.

Tip
This recipe was tested in TM7 so NO NEED to use Simmering basket but it you are using a TM6 or TM5 please place a Simmering basket on the lid in Steps 2, 3 & 4.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
