Kumera (Sweet Potato) and Bacon Soup

Kumera and Bacon Soup Ingredients

  • 680 grams kumera or sweet potato, peeled and cubed
  • 6 slices Shortcut bacon rashes, roughly cut into 2cm pieces
  • 2 cloves garlic
  • 1 onion, peeled and quartered
  • 20 grams coconut oil
  • 500 grams water
  • 2 tablespoons Thermomix Vegetable Stock Concerntrate
  • Baby Spinach or Parsley, to garnish

Recipe's preparation

    Method
  1. 1. Place Onion, Garlic and Bacon into the bowl. Turbo 1 sec x 3 times

    2. Add Coconut Oil and cook for 5 mins/100degrees/Sp2

    3. Add all other ingredients except for the garnish and cook for 20 mins/Varoma/Sp2

    4. Blend for 1min/Sp5 gradually going up to Sp9.

    5. Serve with garnish of Baby Spinach or Parsley on top!

    Thanks for the delicous recipe.  I made it using normal oil and left out the bacon, and it was very tasty and beautiful consistency - making my second batch now!
