Leek, Cabbage, Cannellini & Zucchini Soup

  • 150 grams leek, roughly chopped
  • 2 cloves garlic
  • 1/2 onion
  • 250 grams cabbage, roughly chopped
  • 2 Zucchinis, roughly chopped
  • 1 can Cannellini Beans, drained and rinsed
  • 1-2 tablespoons Vegetable stock paste
  • 700 grams water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place leek, onion, and garlic in bowl and chop for 5 seconds, speed 5. Scrape down the sides of the bowl.

     

  2. 2. Add olive oil and saute for 5 minutes, 100C, speed 1.

     

  3. 3. Add all ingredients to TM Bowl. Cook for 12 minutes at 100 degrees, reverse speed 1

  4. 4. Blend for 40 seconds, starting at speed 5, gradually increase to speed 9

  5. Season with salt & pepper to taste

Tip

Lovely with a dollop of sour cream and a sprinkle of grated parmesan.
