Lentil & Vegetable soup

Ingredients

6 portion(s)

  • 250 grams red lentils, washed and drained
  • 1 brown onion, small, peeled and halved
  • 1 clove garlic
  • 1/2 red capsicum, large, roughly chopped
  • 1 Carrot, small, roughly chopped
  • 1.5 celery stalks, roughly chopped
  • 1 Tomato, medium, roughly chopped
  • 1 Leek, small, roughly chopped
  • 100 grams mushrooms, sliced
  • 150 grams Green beans, sliced
  • 100 grams Sweetcorn kernels, tinned or frozen
  • 1 baby spinach, handful
  • 1 tablespoon Vegetable Stock Concentrate (EDC)
  • 750 grams water
  • 1 tablespoon tomato paste
  • 2 tablespoon mixed, fresh herbs such as parsley, basil & coriander
  • salt and pepper to taste

Recipe's preparation

  1. Add onion, garlic, capsicum, carrot, celery, tomato and leek to TM bowl. Chop 5seconds, speed 5.

  2. Add remainder of ingredients to TM bowl. Place simmering basket on lid (replace MC). Cook for 35 minutes, 100C, counter-clockwise operation, speed 1.

  3. Serve with a sprinkle of parmesan cheese.

Tip

This is a tasty, low GI, low calorie soup great for filling that empty tummy. Make up a batch and have it on hand for whenever you need a food top up. Good to freeze so you have a bowl to take to work each day.

A serve of just over 300gms is approx 180 cals so you have a rtasty, filling soup that is also low calorie.

    Thanks for this recipe 🤩 It was absolutely delicious ! I left out the corn and forgot the spinach tho still a keeper. I made the gluten and grain free bread rolls in Cookidoo to go with it and it was a very filling meal. Made 5 generous bowl fulls.

    I'm not sure if I was supposed to add the lentils to the thermo or leave in the simmering basket but added into the bowl and it was very full. Hope I have done this right. Can't wait to try it.

    What a great filling & easy to make soup this is.
    I had a friend coming for lunch & had to go to the supermarket as there’s lots of veg in this soup. However you could really get away with any veg you had spare.

    Just what I was looking for! Hearty, healthy and delicious. I like to saute the onions & garlic in oil first and sometimes add a rasher of chopped bacon to this too but obviously the calorie content changes!

    I made this tonight & just added whatever vege I had in my fridge & a sweet potato
    I also sautéed the onion & garlic in olive oil for a couple of minutes first & sprinkled Parmesan over the top
    I only got 4 x 350g servings out of mine & I worked it out to be 314 cals per serve

    it it was soo delicious & will be a staple this winter ❄️

    Delicious soup, I added 2 tablespoons of tomato paste. Then a cup of frozen peas carrot and corn and a 1/3 a cup of tiny shell pasta for the last 10 minutes. I left the MC on, soup was still very thick = yum.
    This one will be a regular in our house 💕

    I made this tonight and it was beautiful. I also made a few variations based on what I had available, and left out the onion and garlic as I struggle with those (digestively speaking). It is such a quick and easy dinner and very filling - I'll be making this on the reg for winter work lunches.

    I've made this so many times it's now become a household staple! I have to make two batches, one left as it is and the other I puree for the younger ones, and it tastes just as delicious!  I also add a little bacon too. Thanks for such a great recipe tmrc_emoticons.-)

    This soup is really delicious, I didn't have leeks and only had half the amount of red lentils, I had silver beet growing in the garden so used a couple of big leaves instead of spinach. I didn't want to add the mushrooms so didn't. I also wanted to sauté the chopped vegetables before I added the remaining ingredients so I splashed just a little bit of olive oil and cooked for a couple of minutes on 100* I realise this may change the calorie count but it wouldn't be enough to make a big difference. We really enjoyed this soup, I will be cooking it regularly from now on. Thanks for a great recipe!

    This is a real winner. Great tasting soup and so easy. I browned my onion in a pan first as we are not fond of onions done in the TM. Substituted a few ingredients as I was missing capsicum and mushrooms. I added extra carrot and celery, frozen spinach instead of fresh and added some fresh ginger. It was delicious. The ginger was really yummy in this soup. Love the recipe.

    I didn't quite have all the ingredients.. No mushroom, corn, beans or spinach so I added 2 sweet potato, tin of tomatoes omitted the paste and I thought it was great! Will try following proper next time, but quite happy with my result. Very filling for a hungry day!
