Minestrone Soup

  • .25 bunch parsley
  • 1 onion brown, halved
  • 1 clove garlic
  • 30 grams olive oil
  • 300 grams mince
  • 100 grams eye of bacon, cut into strips
  • 500 grams diced vegetables of choice, carrot,celery,potato,peas,corn,pumpkin
  • 40 grams tomato paste
  • 750 grams water
  • 1 tablespoon Vegetable stock paste
  • 130 grams pasta shells ,mini
  • salt and pepper to taste

Recipe's preparation

    Minestrone Soup
    1. Place parsley into TM bowl and chop for 3 seconds on speed 7. Set aside.

    2. Place onion and garlic into TM bowl and chop for 3 seconds on speed 6. Add oil and sauté for 3 minutes at 100° on speed 1.

    3. Add mince and bacon and cook for 5 minutes at Varoma temperature on Reverse + speed soft.

    4. Add all remaining ingredients except peas if using and pasta shells and cook for 15 minutes at 100° on Reverse + soft speed.

    5. Add pasta (and peas) and cook for a further 15 minutes at 100° on Reverse + soft speed.

    Lovely quick and healthy soup. Being vegetarian, I substituted mince for plant based ‘mince’, and left out the bacon~and added some extra veggies. Also added a splash of white wine.

    Didnt really feel like a soup... It was more like an altered bolognese. It wasnt horrible, just not as expected. But perhaps I over reduced it

    Made this tonight with a few adjustments (left out mince, added more bacon, added a tin of diced tomatoes, added a tin of white beans and used risoni pasta). This was an awesome meal! The kids enjoyed it too. Thanks for the recipe.

    This soup is delicious!!  Thank you!!  We didn't add the mince and we followed the suggestion of adding the tin of tomatoes and less water.  This is now a favourite in our house.  Can't wait to make it again.

    I made this tonight and LOVED it! I didn't use mince but I used 200g of bacon (bacon makes everything better) and a little leftover shredded chicken I had in the freezer, carrot, celery, squash, zucchini, a can of borlotti beans after 25 mins and double the tomato paste. I didn't have any fresh herbs in the fridge so just used a pinch of Masterfoods spaghetti herb mix. I will definitely be making this a regular occurence in my house  tmrc_emoticons.D

    Love this soup. Have made it many times now & still a family favourite. I never add the mince & always use a bag of frozen diced veggies instead of fresh for quickness.....yum!

    This Minestrone Soup was awesome. Very tasty and easy to make. I made a ratatouille a few nights ago so had lots of vegetables to use up - I used zucchini, egg plate, capsicum, carrot and celery all up I put 600 grams of vegetables so the TM was very full but worked great. I will be adding this one to our family favorites for sure! Thanks for sharing.
