Moroccan Lamb & Chickpea Soup

Ingredients

6 portion(s)

Soup

  • 1 onion
  • 2 sticks Celery, with leaves
  • 2 cm ginger, fresh
  • 1 litre water
  • 1 heaped tablespoons stock paste (EDC)
  • 100 g lentils, drained and rinsed
  • 200 g diced tomatoes (tinned or fresh)
  • 1 tbsp Tomato Paste.
  • 1 Cinnamon Sticks, snapped in half
  • 1 tsp ground cinnamon
  • 1 tsp ground turmeric
  • 1 tsp salt
  • 1 tsp pepper
  • pinch ground saffron
  • 200 g chickpeas, rinsed and drained
  • 100 g pasta - short, small
  • 400 g diced lamb

To Serve

  • Lemon wedges
  • Coriander leaves to garnish

Recipe's preparation

  1.  

    Place Onion, Celery & Ginger into bowl.  Chop 5 sec Sp.5

     

    Add Lamb pieces, pulse     turbo 1 sec  x 2

     

     

     

    Add water & stock to bowl, Cook 100°C    10 mins   Sp.2

     

     

     

    Add lentils , tomatoes, tomato paste, spices, salt & pepper to bowl

     

    Cook 100°C    15 mins   Sp.2

     

     

     

    Add chickpeas & pasta to bowl cook for a further 10 mins  100°C    Sp.2

     

     

     

    Serve with lemon wedges & chopped Coriander leaves

    I must say that on the day of making this soup I didn't like it at all. I felt there was way too much cinnamon. However, eating it the next day for lunch, really surprised me. It tasted delicious. Definitely make ahead if you can and the lemon added at the end is a must!

    This was really good. I just guessed how much lamb - I used 500g, however the Thermomix was over the maximum line, so probably could have used less. Squeezing lemon over the serves to serve and sprinkling with coriander was a hit. The best soup I have ever had!
