Moroccan pumpkin soup

  • 1 portion brown onion, Halved
  • 2 cloves garlic, Peeled
  • 40 grams olive oil
  • 2 level teaspoons cumin seeds
  • .5 level teaspoons coriander seeds
  • 750 g pumpkin, Peeled & roughly chopped into 3cm pieces
  • 400 g chickpea, dried, Rinsed
  • 650 g water
  • 80 g Vegetable stock paste, Stock concentrate
  • Half pieces lemon, Juice only

Recipe's preparation

  1. Place onion and garlic in TC bowl, chop 5 seconds, speed 5. Scrape down sides
  2. add oil, cumin and coriander, sauté for 5 minutes, 100 degrees, speed 1
  3. Add pumpkin, chickpeas, water & stock concentrate, cook for 20 minutes, 100 degrees, speed 2
  4. Add lemon juice, purée for 1 minute , slowly increasing from 1 to 9
