Parsnip Pea Bacon Soup

  • 1 bacon hock
  • 1 parsnip, medium to large, peeled, chopped
  • 1 brown onion, peeled, halved
  • 1 clove garlic, peeled
  • 1 tablespoon vege stock
  • 600 grams water
  • 250 grams frozen peas

Recipe's preparation

    Parsnip Pea Bacon Soup
  1. First prepare the bacon hock, if it fits in the Thermomix you can poach it for 60 minutes covered in water, speed Gentle stir setting, 80 degrees. If it doesn't fit in the Thermomix bowl, cook on stove in a pot, covered with water for 1 hour at a gentle simmer. 

     

    Then reserve the cooking water, set the hock aside to cool and start the soup.

    In the clean bowl, put the onion and garlic, chop 5 seconds speed 5. Add frozen peas, grind 10 seconds on speed 10. Then add vege stock, reserved bacon cooking water and then add enough water to reach the 750 ml point in the bowl. Cook 20 minutes speed 2 at 100 degrees. 

     

    While the soup is cooking, strip the skin from the hock and discard. Then strip the meat from the bacon hock, add little pieces to the soup (little fatty bits add good flavour). Finely chop the meat. 

    AT the end of cooking, puree the soup for 1 minute, slowly going up to speed 10. Add the reserved finely chopped meat and cook 2 minutes at speed 2, 100 desgrees. You could add more peas at this stage if you want. 

    Then serve.
