Potato & Bacon Soup

Ingredients

6 portion(s)

Soup Ingredients

  • 1 onion, peeled & halved
  • 4 Rashers bacon quartered
  • 1 tablespoon olive oil
  • 750 grams potatoes, roughly chopped
  • 500 grams water
  • 2 tablespoon vegetable stock
  • 2 teaspoon wholegrain mustard
  • 120 grams cream

Recipe's preparation

  1. Add onion & bacon 5s/speed 4 Scrape sides down


    Add oil 3mins/varoma/speed 1


    Add water, potatoes and stock 20mins/100degrees/counter-clockwise operationspeed 1 or until potatoes cooked to your liking


    Remove MC add cream & wholegrain mustard. 2mins/100degrees/counter-clockwise operationGentle stir setting


    I like to serve my soup with the pototoes still a bit chunky, if you would like it smoother blend 5sec/speed 4 until desired concistancy is acheived.


    Serve with freshly made sliced bread/bread rolls.

    I whipped this up for lunch today, HOLY SMOKES it's good! Followed the recipe but added three cloves of garlic at step one. The flavour is brilliant, it's easy to throw together and my guests were raving about it. Thanks for a fabulous recipe!

    This is easy to make and so flavoursome! I used sweet potato, potato and pumpkin. I also used Dijon mustard instead of whole grain. Everyone loved it. Thanks for sharing!

    Delicious. I made it FODMAP friendly by using a mixture of garlic and onion infused oils, left out the mustard, onions, water and stock, and added a FODMAP-friendly stock.

    So yum and easy to make! I used store bought liquid chicken stock (500ml) instead of using water and vege stock and i left out the mustard. Amazing! Will make again. Thankyou for a delicious recipe!

    Yum! I used half potato and half cauliflower. I also added 2 x peeled and diced zucchinis (peeled to hide the green). I only used 1 tablespoon of stock paste and I'm glad as I did, as I think it would have ruined the flavour if I'd done the 2 tablespoons. I used Philadelphia light cooking cream. So delicious!

    I'm would recommend to blend it for a good 20 seconds to make it smooth. My husband prefers it smoother too. I love it a bit chunkier I have to say tmrc_emoticons.)

    This nice.  For my taste only I changed it a little bit.  While to onions were cooking I cooked the bacon on the stove until it got a little bit of colour , not crispy.  Once the onion stage was complete I added the bacon & continued following the recipe & blitzed the cooked soup at the end which then gave the soup an even taste of bacon throughout the soup.

    YUM!!

    Thanks for the recipe, it has a really tasty flavour. I only had 300g of potatoes, so I substituted with 

    carrots and sweet potato. I had no cream, so I added 30mls of milk, I also left it chunky, love the whole

    grain mustard in it. Thanks again  tmrc_emoticons.)
