  • 500 g Butternut pumpkin, (cubed)
  • 1 carrot, diced
  • 1 sweet potato, cubed
  • 1/2 clove garlic
  • 1/2 teaspoon curry powder
  • 1/2 onion
  • 1/2 tablespoon Vegetable Stock - EDC
  • 1/2 teaspoon cumin
  • 1 handful of unsalted cashews
  • 500 g water

Recipe's preparation

    Pumpkin & Cashew Soup
  1. Place onion and garlic into mixing bowl and chop 3 sec/speed 7. Scrape down sides of bowl.

  2. Add pumpkin, carrot, sweet potato & cashews and chop 15 sec/speed 7. Scrape down sides of bowl.

  3. Add water, curry powder, stock and cumin and cook for 20 min/100 degrees C/speed 1.

     

  4. Blend 1 min/speed 9, gradually increasing speed from speed 1 to speed 9.

    I made this last Winter and 12 months on I'm about to start my next large batch of 15kg pumpkins.  It frezes really well.  Thank goodness I remembered to save the recipe  tmrc_emoticons.)

    I enjoyed this, I didn't have any sweet potato so added an extra carrot and it turned out nicely. I always roast my pumpkin too for more flavour. Nice soup, cheers.

    I usually make pumpkin soup with bacon and sweet corn which is nice but this one is delicious.  Think I will be doing this one many more times. Yumm!!!
