Pumpkin Soup

  • 600 grams pumpkin, Roughly Cubed: 2-3cm pieces
  • 1 Medium Sweet Potato, Roughly Cubed: 2-3cm pieces
  • 1/2 onion, Quartered
  • 1 tablespoon olive oil
  • 2 tablespoons Thermomix Veggie Stock Paste
  • 1 teaspoon curry powder
  • 1 teaspoon cracked black pepper
  • 875 g water

Recipe's preparation

  1. Add onion and olive oil to thermomix and cook 2min/100°C/sp1 with measuring cup on.
    Preheat oven to 200°C.
  2. Put simmering basket into thermomix and add pumpkin. Pour in 500g water. Cook 20min/veroma/sp1 with measuring cup on.
  3. While thermomix is cooking the pumpkin, put sweet potato on a baking tray lined with baking paper and bake in oven 20mins or until lightly browned.
  4. Pour pumpkin, sweet potato and the remaining water (375g) into thermomix and blend 30sec/sp4 with measuring cup on. Repeat if necessary.
  5. Add remaining ingredients and cook 10min/100°C/sp2.
