Quick and tasty Vegetable (and chicken) soup

Ingredients

Variation Easy Vegetable soup

  • 3 carrots, medium
  • 2 zucchini, medium
  • 1 parsnip, peeled
  • 1 onion, quartered
  • 2 stalks Celery
  • pinch cayenne
  • pinch Tarragon
  • 1 level teaspoon Parseley
  • --- black pepper
  • 1 teaspoon olive oil
  • 1 litre Massal chicken liquid stock
  • 1-2 cloves garlic
  • 1 piece chicken breast, optional

Recipe's preparation

  1. Skin and quarter onion, add to TM (and 1 to 2 cloves garlic if desired) and chop for 4-5 seconds speed 5
  2. Add olive oil to TM and cook onion and garlic 5min, 100 c, speed 2, reverse
  3. While onion is cooking wash vegies and string celery. Chop carrot, parsnip, celery and zuchinni into 1" chunks, halved.
  4. After onion has cooked add carrot parsnip, celery and zuchinni, chop in TM speed 4-5 for about 3 seconds (check for desired size, but do chop quite finely for speedy cooking). Add 750 - 1lt stock, and any flavourings (salt and peppery, chopped parsely, paprika, garlic powder, smoked paprika, cayenne, herbs etc) and cook 20min.
  5. While vegies are cooking you can steam a chicken breast (slice into 1cm or so pieces and put in steaming tray) on top of TM. When cooked pull apart with forks and then add to soup. Cook for an extra 2 min, pour into Thermoserver and either wait half an hour for flavours to mingle or eat straight away.

Tip

You could also blend this until smooth if wanted (or to ensure no loss of texture when freezing and reheating).
