Quick & Easy Gazpacho

Ingredients

  • 500 grams tomatoes, Ripe
  • 100 g carrots
  • 75 g cucumber
  • 3 large cloves garlic
  • 2 tbsp Basil & Oregano, fresh
  • 1 red capsicum, deseeded
  • 2 tablespoons red wine vinegar
  • salt & pepper, To taste

Recipe's preparation

  1. Roughly chop tomatoes and cucumber.


    Add tomatoes, Carrots, Cucumber, Capsicum and Garlic to thermomix.


    process for 2mins on speed 9.


    Add Herbs and blend for a further 10 secs on speed 9.


    Add vinegar to mix and season to taste.


    Place in fridge to chill and stir occasionally to develop flavours.


    Serve with Croutons and ice cubes if desired.
