Quinoa Cauli Chicken Soup

  • 2 Spring onions (cut into chunks)
  • 20g Oil (I use my own Ghee - see my recipe)
  • 1300g water
  • 1/2 Cauliflower broken into florets
  • 1 MC quinoa
  • 2 Tbspns veggie stock concentrate
  • 2 Chicken breasts or boneless thighs, cut into chunks

Recipe's preparation

    Quinoa Cauli Chicken Soup
  1. Chop your spring onions on speed 5 for 3 secs or to your liking

  2. Add oil and saute for 2 mins on speed 1

  3. Pop your cauliflower florets in and blitz on speed 5 for 2-3 seconds

  4. Add water, quinoa and veggie stock concentrate, pop the lid on and put chicken pieces in the Varoma and cook all on Varoma, speed 1 for 20mins

  5. Take chicken out, allow it to cool slightly, pour soup into Thermo Server, tear the chicken into pieces and add to soup tmrc_emoticons.)

If you like a less chunkier soup, halve the Quinoa and blitz your Cauli for longer tmrc_emoticons.)
