Roast Pumpkin and Leek Risoni Soup

  • 350 g pumpkin, peeled and cubed
  • 1 brown onion, quartered
  • 1 leek, sliced 2cm thick
  • 150 g potatoes, peeled and quartered
  • 30 g Butter
  • 300 g Milk
  • 2 heaped tablespoons Vegetable stock paste
  • 750 g hot water
  • 200 g dried risoni pasta
  • 250 g cream

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Pumpkin
  1. Bake Pumpkin in hot oven until browned (or use leftover roast pumpkin)
  2. Soup
  3. Place Onion, Leek in TM Bowl and chop 3 secs/speed 5, scrape down sides of bowl.

    Add Potatoes in TM Bowl and chop 3 secs/Speed 5, scrape down sides of bowl.

    Add butter and cook 5mins/100deg/Speed 1.

    Add milk, stock paste and water and cook 15mins/100deg/Speed 1, place simmering basket on lid to stop splatter if needed.

    Add baked pumpkin and blitz 20 secs/Speed 5.

    Insert Butterfly.

    Add risoni and cream and cook 8 mins/100deg/Reverse Speed 1, use steaming basket to stop splatter.

    Pour into ThermoServer and rest for 10 minutes, then Serve.

Tip

Salt and/or pepper can be added for taste, if needed.

Milk and cream can be substituted with Coconut Milk and Coconut Cream, if desired.

This soup does thicken after resting, so if there is any leftovers, you may need to add extra milk/water when you re-heat tmrc_emoticons.)
